When it comes to travel destinations, few places can boast more than one or two seriously incredible offerings. Orlando, Florida does not have that problem. Between its theme parks, weather, golf courses, and cuisine, Orlando is extraordinarily well-rounded for any traveler. Many a blog post could be written (and have been!) about the diverse accolades of The City Beautiful, but today we want to focus on our favorite one – cuisine.
Ahhh, the cuisine of Orlando is varied, plentiful, and ever-changing. To best demonstrate this, we’ve spoken with Guido Antonio Estremera, Executive Chef of Orlando’s latest and greatest restaurant Valencia, which is located in the elegant Grove Resort & Spa Orlando. Valencia opened on October 2nd, and is taking the Orlando cuisine scene by storm!

Guido, will you share a bit about your background?
My passion for the culinary arts began in Peru at my family’s restaurant when I was 16 years old. Prior to joining the Grove Resort & Spa family as Executive Chef in Orlando, I served as Director of Food & Beverage for the Sheraton Jacksonville, as the Executive Chef for Costa d’Este in Vero Beach, and I was the Executive Sous Chef for The Center for Leadership Excellence located in Bethesda, Maryland, to name a few. You could say I’ve been around the block!
What drew you to this field of work?
I’m pleased to be able to be creative while simultaneously pleasing customers. I’ve always had a great passion for the art of food, flavors, etc.
How did you come to not only be a part of Valencia but the head chef at that?
I believe it could be my extensive experience in different types of properties, culinary styles and my passion for the art of food!
Which cuisines will Valencia be focusing on?
The restaurant will be focusing on Southern European cuisine, namely that of Italy, Southern France, and Spain. Our dishes contain specific ingredients that distinguish it from the rest of Europe’s cooking traditions and other Mediterranean countries.
Which menu dish is your favorite?
Without a doubt, the Seafood Paella, which is now the best Paella in Orlando.
What sort of alcoholic beverages are available?
We have an excellent wine list that pairs with the restaurant menu and a unique cocktail menu.
What are you most excited about for this new chapter/new restaurant?
I’m most excited to be cooking in a kitchen that I myself have seen built gradually over months and months!
